2 cups pancetta, diced
2 cans chopped clams
1-1/2 lbs. littleneck or cherry clams
1 jar clam juice
1 cup white wine
1 lemon, zested and juiced
1 tablespoon garlic, chopped
1 tablespoon shallots, sliced
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
Parsley Pesto
2 cups parsley, finely chopped
1/2 cup toasted almonds, crushed
1/2 cup capers, roughly chopped
1/2 cup extra virgin olive oil
Salt & pepper, to taste
