3 bell peppers, ribs & seeds removed, sliced
1 small red onion, sliced
1 lb. shrimp, peeled and deveined
3 Tbsp. Fajita Seasoning Mix
1 (14-oz.) can of diced fire-roasted tomatoes

1/2 cup heavy cream
4 oz. cream cheese, softened
1 cup shredded cheddar cheese

Instructions:Â
- Heat 1 Tbsp. olive oil in a large skillet over medium heat. Add peppers and onions and sauté, stirring frequently, until tender and soft, about 3-5 minutes. Remove from skillet and set aside.Â

- Add peppers and shrimp to skillet with pasta and sauce. Cook and stir until heated through.Â
- Divide the pasta into serving dishes and garnish with cilantro. Serve and enjoy!
